Prepare the apples: Wash the apples thoroughly and remove the cores. Cut them into chunks.

Cook the apples: Add the apple chunks to a large pot and cover them with a small amount of water (just enough to cover the bottom of the pot). Bring the mixture to a boil, then reduce heat to low and simmer for 20-30 minutes, or until the apples are very soft.

Strain the juice: Let the mixture cool slightly, then strain it through a strainer or cheesecloth into a large bowl. Press the pulp to extract as much juice as possible.
